To Pickle Beet-root

Ingredients

Directions

Cook the beetroot

  1. Wash the beetroot thoroughly without cutting off any fibers.

  2. Boil the beetroot in plenty of water with a little coarse sea salt for 30 minutes.

  3. Check if the skin comes off easily; if so, it's done.

  4. Lay the beetroot on a cloth and rub off the skin with a coarse cloth.

  5. Slice the beetroot.

Pickle and seal

  1. Place the sliced beetroot in a jar.

  2. Boil vinegar with whole black pepper and ginger.

  3. Let the vinegar mixture cool.

  4. Pour the cooled vinegar over the beetroot in the jar.

  5. Seal the jar tightly once cooled.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beetroot
Provides the main body, color and earthy sweetness of the pickle.
Vinegar
Adds acidity that preserves the beetroot and gives it a sharp, tangy flavor.
Whole black pepper
Adds a mild spicy aroma that flavors the pickling liquid.
Ginger
Adds a warm, aromatic note to the pickling vinegar.

The step that matters

Let the vinegar mixture cool before pouring. Pouring hot vinegar over sliced beetroot can soften the slices and cook them further, leaving a mushy texture. Letting the liquid cool first keeps the beetroot firm and crisp.
