Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oatmeal
Its starch thickens the water as it cooks, giving the porridge its body.
Butter
Stirred in at the end, it adds richness and a smooth, silky mouthfeel.
Brown sugar
Adds sweetness and a molasses note that balances the plain oats.

The step that matters

Mixing the oatmeal with cold water before adding it to boiling water. Oat starch clumps when it hits hot water directly. Pre-mixing it in cold water separates the particles so they disperse evenly and the porridge cooks smooth rather than lumpy.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Capersfits less well

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
