Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wild fowl
Forms the main meat, which cooks through in the oven and gives the dish its body.
Butter
Adds fat that enriches the meat and helps the skin brown.
Onion
Adds aroma and subtle sweetness to the pan juices used for basting.
Hot water
Creates moisture in the pan, which helps keep the bird from drying out.

The step that matters

Basting the fowl. Spooning pan liquid over the bird keeps its surface moist and helps it brown evenly. Basting should begin early enough to prevent the skin from drying and setting before the bird is cooked.
