What each ingredient does

Eggs
Bind the noodles and fruit together and set the pudding as it cooks.
Flour
Forms the dough that is rolled into noodle strips for structure.
Suet
Adds richness and moisture to the pudding.
Currants
Add chewy sweetness and body throughout the pudding.
Raisins
Add chewy sweetness and body throughout the pudding.

The step that matters

Grease and sugar a mold, then pour in the mixture.. Greasing and sugaring the mold helps the pudding release cleanly after boiling, and the mixture should be well combined first so the eggs set evenly rather than in pockets.
