On Boasting Meat
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat your oven to 400°F (200°C).
Place the meat in a pan with 3-4 cups of water.
Turn the pan frequently to ensure even roasting.
When the meat is halfway done, flour it well.
Turn the meat over to brown the other side.
If the water level gets low, add a little hot water.
Ensure all dishes and plates are heated before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
