Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Assemble the pie

  1. Stuff the pigeons with the grated ham, cracker (or asparagus), salt, pepper, and butter.

  2. Place the stuffed pigeons in a dish and pour in milk and water until nearly covered.

  3. Cover the dish with pie crust and bake for 1 hour.

  4. For tender pigeons, parboil them for 20 minutes and use the boiling water in the pie.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the meat that forms the body of the pie.
Grated cold ham
Adds savoury, salty flavour that seasons the stuffing.
Butter
Adds richness and fat that keeps the stuffing moist.
Milk
Adds liquid and gentle richness to the cooking dish.

The step that matters

Parboiling the pigeons. Parboiling for 20 minutes softens the tough muscle fibres of older birds before baking. Using the boiling water in the pie keeps the juices and flavour in the dish.

Swap the asparagus

How well each one fits the dish's main ingredients (ham, pepper, butter, milk):

  1. Potatofits better
  2. Capsicumfits better
  3. Asparagusthe original
  4. Tomatofits about as well

Fit is the average pairing score against ham, pepper, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
