Giblet Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Prepare the giblets by cleaning and chopping them.

  2. In a pot, sauté chopped onion, celery, and carrots until soft.

  3. Add the giblets and seasoning, then cover with broth.

  4. Simmer until the giblets are tender.

Assemble and bake

  1. Fill the pie crust with the giblet mixture.

  2. Cover with another pie crust, seal edges, and cut slits on top.

  3. Bake at 350°F (175°C) for 30-40 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meaty filling that becomes tender during simmering.
Pie crust
Encloses the filling and browns in the oven for a golden finish.
Onion
Softens while sautéing, adding sweetness and a savory aromatic base.
Carrots
Soften while cooking, adding mild sweetness and color to the filling.
Broth
Adds moisture and savory flavor while the giblets simmer.

The step that matters

Simmer until the giblets are tender. Giblets need a slow, covered simmer to break down connective tissue. Stopping early leaves them tough and chewy inside the baked pie.

Swap the onion

How well each one fits the dish's main ingredients (celery, carrot):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against celery, carrot. Candidates are from the same food group and used in at least 100 recipes.
