Sausage Rolls

Ingredients

Directions

  1. Open a tin of Australian mince meat carefully.

  2. Remove the fat from the top of the meat with a spoon.

  3. Take ½ lb. of the mincemeat, place it in a bowl, and season with pepper and coarse sea salt.

  4. Chop the sage leaves finely on a board.

  5. Mix the chopped sage into the mince meat.

  6. In another bowl, combine ¾ lb. of flour with 1 teaspoon of baking powder and ¼ lb. of clarified dripping.

  7. Rub the dripping into the flour until well mixed and no lumps remain.

  8. Add enough water to form a stiff paste.

  9. Flour a surface and turn the paste out onto it.

  10. Divide the paste in two to avoid overhandling.

  11. Roll out each portion into a thin sheet, about ⅛ inch thick.

  12. Cut the paste into squares, approximately 6 inches each.
