Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down into a soft, mashable body that thickens and gives the soup its base texture.
Butter
Fat that softens the leeks or onions and carries flavour into the soup.
Milk
Adds richness and creaminess, and its proteins help give the soup a smooth mouthfeel.
Tapioca
Starch that thickens the soup as it boils, giving it body without flour.

The step that matters

Sprinkling in the tapioca. Tapioca added in one clump forms lumps that are hard to remove. Adding it gradually while stirring keeps the starch dispersed so it thickens evenly.
