Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Strawberry Cream
Ingredients
Directions
Prepare the strawberries
Wash and inspect the strawberries, discarding any that are not good.
Remove the stems and place the strawberries in a bowl.
Sprinkle 2 tablespoons of caster sugar over the strawberries to draw out the juice.
Use a silk sieve over a bowl to strain the strawberries, pressing them with a wooden spoon.
Make the base
Soak 1/2 ounce of gelatin in 2 tablespoons of cold water in a small saucepan.
Heat the saucepan and stir until the gelatin is completely melted.
Add 2 ounces of caster sugar and the strained lemon juice to the saucepan, stirring well.
Combine this mixture with the strained strawberries in the bowl, mixing thoroughly.
Add cream and set
In a separate bowl, whip 1/2 pint of cream until stiff peaks form.
Gently fold the whipped cream into the strawberry mixture.
Scald a pint mold with hot water. Rinse the mold with cold water.
Pour the strawberry cream into the mold and chill in ice until ready to serve.
To serve, dip the mold in boiling water for a second, then shake to loosen the cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Strawberries
- Provide the main flavour and fruit body of the cream.
- Gelatin
- Sets the liquid strawberry mixture into a firm, sliceable cream when chilled.
- Cream
- Whipped to add air and richness, giving the set cream a light, smooth texture.
- Caster sugar
- Sweetens the strawberries and draws out their juice.
- Lemon juice
- Adds acidity that brightens the strawberry flavour.
The step that matters
Melting the gelatin fully before combining. Gelatin must dissolve completely in warm liquid; any undissolved granules will leave gritty specks and uneven setting. Folding in cream only after the mixture has cooled slightly keeps the whipped cream from deflating.
