Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Pounded to a smooth base that gives the fritters their body.
Eggs
Bind the mixture and help it set as the fritters cook.
Butter
Adds richness and fat that carries flavour and helps browning.
Gruyère cheese
Adds savoury, salty flavour and a little richness to the mixture.

The step that matters

Frying in boiling fat until golden brown. The fat must be hot enough to cook the pieces quickly through and brown the outside. If it is too cool, the fritters absorb excess fat and turn greasy and heavy before the centre sets.

Swap the potato

How well each one fits the dish's main ingredients (gruyere cheese, egg, butter, pepper):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Asparagusfits less well

Fit is the average pairing score against gruyere cheese, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
