What each ingredient does

Turkey
Forms the main body of the galantine, carrying the force-meat and fillets as one rolled piece.
Calf's feet
Release gelatin during long simmering, helping the broth set into a firm aspic.
Bacon
Adds fat and savoury flavour to the force-meat, keeping the filling moist as it cooks.
Pickled tongue
Contributes savoury, tangy flavour and a firm texture to the layered filling.
Truffles
Add a strong earthy aroma that perfumes the filling throughout.

The step that matters

Tie the galantine tightly before boiling. Loose wrapping or thread lets the roll open or lose its shape during the long simmer, and layers can separate. Firm, even tying keeps the layers compact so the slices hold together when cut.
