Souffles

Oven, in the book's wordsA slack oven

Ingredients

Directions

The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Pass the mixture through a sieve.

  2. In a saucepan, combine the mixture with butter and chopped vanilla; stir over low heat until thickened.

  3. Let it reduce until consistent, then remove from heat and take out the vanilla.

  4. Allow to cool slightly, then mix in the egg yolks and a small piece of butter.

  5. Gently fold in the whipped egg whites.

  6. Fill eight buttered paper cases with the mixture.

  7. Place the cases on a baking sheet and bake in a 300°F (150°C) oven for 18 minutes.
