Make the soup

  1. Add the chopped onion, celery, and lentils to the saucepan.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lentils
Provide the main body and thickness as they soften during long simmering.
Butter or dripping
Fat that softens the onion and celery and carries their flavour into the soup.
Onion
Adds savoury sweetness and aroma as it softens in the fat.
Carrot
Adds subtle sweetness and body when cooked and rubbed through the sieve.

The step that matters

Stirring during the initial simmer. Lentils and chopped vegetables scorch easily on the base of a saucepan before liquid is added. Stirring occasionally with the lid on keeps heat even and prevents burnt flavours from developing.

Swap the lentils

How well each one fits the dish's main ingredients (carrot, onion, celery, butter, pepper):

  1. Beansfits better
  2. Black-eyed peafits about as well
  3. Lentilsthe original
  4. Chickpeafits about as well

Fit is the average pairing score against carrot, onion, celery, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
