Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel, core, and chop the apples.

  2. In a small saucepan, combine the apples, sugar, and water, and stew until soft.

Make the filling

  1. Separate the egg; add the yolk to the apples and stir well.

  2. Beat the egg white until stiff and gently fold it into the apple mixture.

Assemble and bake

  1. Butter a ½ pint pie dish and line it with bread crumbs (1 inch thick at the bottom and on the sides).

  2. Pour the apple mixture into the dish, cover with more crumbs, and dot with remaining butter.

  3. Bake at 400°F (200°C) for about 20 minutes until the crumbs are nicely browned.

Serve

  1. Carefully turn it out onto a hot dish and sprinkle with white sugar.

  2. Serve with apple syrup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and tender, moist body of the pudding once stewed.
Bread crumbs
Form the structure that holds the filling and crisp and brown on top in the oven.
Egg
The beaten white adds lightness and the yolk helps bind the apple filling.
Butter
Adds richness and helps the top crumbs brown in the oven.
Moist sugar
Sweetens the apples and adds flavour to the stewed filling.

The step that matters

Folding in the beaten egg white. Stiff whites trap air that lightens the filling; overmixing or letting them deflate loses that lift, so fold gently and quickly.

Swap the apple

How well each one fits the dish's main ingredients (bread, egg, sugar, butter):

  1. Vanillafits better
  2. Figfits better
  3. Datesfits about as well
  4. Applethe original

Fit is the average pairing score against bread, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
