Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Cold Meat Rolls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Chop the cooked meat and onion very finely.

  2. Season with pepper and salt.

Make the dough

  1. Mash the potatoes smoothly.

  2. Add 2 tablespoons of melted butter.

  3. Whisk over low heat to dry.

  4. Turn the mixture onto a table.

  5. Add enough flour to form a dough.

Shape and cook

  1. Roll the potato dough to about ¼ inch thick and cut into 6-inch squares.

  2. Place a spoonful of the chopped meat on each square.

  3. Wet the edges and fold the dough over to seal.

  4. Place the rolls on a greased baking sheet.

  5. Bake at 400°F (200°C) until light brown, or fry in hot fat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked potatoes
Mashed to form the dough that encloses the filling.
Butter
Adds richness and fat, keeping the dough tender.
Flour
Binds the mashed potato into a dough that holds its shape.
Cooked meat
Forms the savoury filling inside each roll.
Onion
Adds aroma and flavour to the meat filling.

The step that matters

Add enough flour to form a dough. Too little flour leaves the potato mixture too wet to roll and seal, while too much makes the dough dense and tough. Add it gradually until the dough just holds together.

Swap the onion

How well each one fits the dish's main ingredients (meat, butter, potato, flour, pepper):

  1. Chivefits better
  2. Shallotfits about as well
  3. Asparagusfits about as well
  4. Onionthe original

Fit is the average pairing score against meat, butter, potato, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
