What each ingredient does

Bread crumbs
Forms the bulk of the pudding and soaks up the liquid to hold its shape.
Flour
Adds body and helps bind the crumbs and fats into a firm, sliceable pudding.
Suet
Fat that keeps the pudding moist and tender as it steams.
Eggs
Bind the mixture and set during steaming to give structure.
Sugar
Adds sweetness and contributes to a rich, dark, caramel-like flavour.
Currants
Provide concentrated sweetness, chewy texture and fruity flavour throughout the pudding.

The step that matters

Keep the pudding steaming for the full time at a steady simmer. Steam carries gentle, even heat through the thick mixture. If the water boils dry or drops too low, the pudding cooks unevenly and can turn heavy or dense in the centre.

Swap the currant

How well each one fits the dish's main ingredients (bread, flour, sugar, raisin, orange, lemon, apple):

  1. Figfits better
  2. Cranberryfits better
  3. Vanillafits better
  4. Currantthe original
