What each ingredient does

Butter or dripping
Provides fat that makes the pastry rich, tender and flaky as it bakes.
Apples
Supply the filling that softens and becomes sweet and juicy inside the pastry.
Sugar
Adds sweetness and helps the pastry brown lightly on the surface.
Beaten egg or milk
Brushed on top to promote browning and a glossy finish.

The step that matters

Enclosing each apple in the paste. The paste must fully seal around each apple, with no gaps or thin spots. Any opening lets syrup escape during baking and can leave the pastry dry or split.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (butter, sugar, apple, egg, lemon, nutmeg):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against butter, sugar, apple, egg, lemon, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
