Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Thick cream
Provides the fat and liquid that trap air to form the whipped structure.
Large egg white
Adds proteins that help stabilise the foam and give it body.
Fine powdered sugar
Sweetens the cream and dissolves easily into the liquid for a smooth texture.
Fresh lemon juice
Adds acidity that helps stabilise the egg white foam.

The step that matters

Whisking until a firm froth forms. Whisking incorporates air into the cream and egg white, forming bubbles that set the foam. Under-whisking leaves it loose, while over-whisking can make it grainy and cause it to separate.

Swap the lemon
