Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding base

  1. In a stew pan, combine bread crumbs and enough milk to cover them.

  2. Add lemon peel, grated nutmeg, and a small piece of cinnamon.

  3. Boil for about 10 minutes.

  4. Sweeten with powdered sugar to taste.

  5. Remove the cinnamon and add the eggs.

Bake or boil

  1. Beat well together and bake at 350°F (175°C) for 30 minutes, or boil for slightly more than 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the milk and form the body of the pudding.
Eggs
Bind the mixture and set it into a custard-like texture when cooked.
Milk
Softens the bread and provides moisture for a tender interior.
Powdered sugar
Adds sweetness to balance the spices and lemon.

The step that matters

Beat well together and bake or boil. Eggs must be fully mixed into the soaked crumbs so the custard sets evenly. Under-baking leaves a wet centre, while overcooking can make the eggs curdle and turn the texture rubbery.

Swap the lemon
