Ingredients

Directions

  1. In a large bowl, mix the sugar, lemon juice, grated lemon peel, brandy, sweet wine, and cream.

  2. Whisk the mixture well and remove the froth with a skimmer.

  3. Continue whisking until you have enough whipped cream, then set it in a cold place to drain for 3-4 hours.

  4. In a deep dish, layer the sponge biscuits, ratafia, almonds, nutmeg, lemon peel, currant jelly, and raspberry jam.

  5. Pour over the biscuits about 1 pint of custard, made thicker than for apple pie.

  6. When ready to serve, top with the whipped cream and sprinkle with nonpareil comfits.
