Why it works: Lemon and orange match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓
Savoy Cake, or Sponge Cake in a Mould
Ingredients
Directions
The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 300°F (150°C).
In a bowl, beat the eggs and sugar until light and fluffy.
Gently fold in the flour, lemon zest or essence, and orange‑flower water.
Ensure the mould is completely dry, then grease it with butter.
Dust the inside of the mould with powdered sugar, shaking out the excess.
Tie a strip of paper around the mould.
Bake and serve
Fill the mould three‑quarters full with the batter.
Bake for 1 hour, then let it stand for a few minutes before removing from the mould by gently shaking.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whipped with sugar to trap air, giving the cake its light, airy structure.
- Sugar
- Sweetens the cake and helps the whipped eggs hold their foam.
- All-purpose flour
- Provides the starch that sets during baking to give the cake its body.
The step that matters
Gently fold in the flour. Folding keeps the air bubbles from the whipped eggs intact. Vigorous stirring knocks out that air and gluten develops, producing a dense, tough cake instead of a light one.
Swap the orange
How well each one fits the dish's main ingredients (egg, sugar, flour, lemon, butter):
- Raisinfits better
- Vanillafits better
- Figfits about as well
- Orangethe original
Fit is the average pairing score against egg, sugar, flour, lemon, butter. Candidates are from the same food group and used in at least 100 recipes.
