What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm jelly as it cools.
Loaf sugar
Adds sweetness and, boiled to candy height, body to the syrup base.
Lemon juice
Adds acidity that balances the sweetness and brightens the flavour.
Rum
Contributes alcohol and aroma that flavour the jelly.
Brandy
Adds alcohol and aroma, deepening the flavour of the punch.
Wine
Adds liquid volume and fruity flavour to the punch base.

The step that matters

Dissolving the isinglass. Isinglass must dissolve fully before it is added, or it can leave lumps or weak spots in the set jelly. Gentle heat helps it dissolve evenly. Adding it to a mixture that is too cold or too alcoholic can make it set unevenly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, rum, wine, brandy):
