Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Peas
- Provide the main body of flavour and a thick, smooth texture once pulped.
- Good stock
- Adds savoury depth and liquid that carries the soup's body.
- Onion
- Adds aromatic sweetness and savoury background to the soup.
- Lettuce
- Contributes mild sweetness and soft texture as it cooks down.
The step that matters
Pulping the mixture through a sieve. Pushing the cooked material through a colander or sieve removes fibrous skins, which gives the soup a smooth texture instead of a grainy one.
Swap the onion
How well each one fits the dish's main ingredients (peas, sugar, beef, lettuce, parsley, mint, pepper):
