Why it works: Lemon and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 53,532 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Orange Marmalade
Ingredients
Directions
Prepare the peel
Wipe the oranges with a hard cloth and thinly pare the yellow rind into slender chips.
In a small saucepan, boil the chips with 2 cups of water slowly for 30 minutes.
Prepare the pulp
Remove the skin from the oranges, break the pulp, and place it in a jelly pan with 5 cups of water.
Boil the pulp gently for 30 minutes, stirring occasionally.
Pour the mixture into a flannel bag and let it drain thoroughly.
Make the marmalade
In a clean jelly pan, combine the drained liquid, the chips, the liquid from boiling the chips, and 5 lbs of sugar.
Stir and boil for 15 minutes, then skim off any foam.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Bitter oranges
- Supply the bitter peel and pulp that give marmalade its characteristic flavor and pectin.
- Crystallized sugar
- Sweetens the marmalade and helps it set into a thick, spreadable texture.
- Lemons
- Add acidity and extra pectin to help the marmalade set.
The step that matters
Boiling the final mixture. Boiling for the full 15 minutes concentrates the sugar and dissolves it so the pectin and acid can set the marmalade; undercooking leaves it runny.
Swap the bitter orange
How well each one fits the dish's main ingredients (lemon, sugar):
- Orangefits better
- Limefits better
- Vanillafits better
- Bitter orangethe original
Fit is the average pairing score against lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
