How to Give a Dinner

Ingredients

Directions

  1. Prepare warm stock and remove from heat.

  2. Stir in white sauce for a few minutes and pour into a small basin.

  3. Once cooled, the sauce will set into a jelly.

  4. On a plate, pour a little white sauce and layer with thin slices of chicken.

  5. Dip ham in stock and spread over chicken, then cover with more chicken slices.

  6. Top with remaining white sauce, reserving some for later.

  7. Once set, cut into oval pieces resembling lobster cutlets.

  8. Carefully lift each cutlet and cover edges with nearly set white sauce.

  9. Cut tiny green leaves from pickled gherkins and red leaves from beetroot or chili.

  10. Place four leaves in a star shape on each cutlet, securing with a drop of white sauce.

  11. Add a small piece of parsley in the center of each star and a lobster-claw.

  12. Arrange cutlets in a silver dish around the aspic jelly, garnishing with parsley.
