Almond Toffee

Ingredients

Directions

Prepare the almonds

  1. Blanch the almonds, halve them, and lay them flat side down on a buttered shallow tin.

Make the toffee

  1. Combine brown sugar, butter, water, and half the lemon zest in a saucepan.

  2. Boil until the mixture reaches a crisp stage, tested by dropping a small amount into cold water.

  3. Once boiling has ceased, stir in the lemon juice.

Cool and finish

  1. Allow the toffee to cool; it will be easy to remove from the tin.

  2. (Optional) For a variation, omit the almonds and lemon and add a little vanilla flavoring.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sweetness and caramel flavor that forms the toffee base.
Butter
Adds fat and richness, giving the toffee a smooth, tender texture.
Almonds
Supply the nutty crunch and structure of the finished toffee.
Lemon
Adds acidity and bright aroma that balance the sweetness of the sugar.

The step that matters

Boiling to the crisp stage. The toffee sets hard only when the sugar concentration is high enough. Stopping too early leaves it soft and sticky, while boiling too long can scorch the sugar and make it bitter.
