Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Tapioca Cream
Ingredients
Directions
Prepare the tapioca
Soak the tapioca in cold milk for 2 hours.
Boil the tapioca with the lemon rind for about 5 minutes.
Add the sugar and beat the yolks of the eggs, then pour over the tapioca.
Stir occasionally until cold.

Whip the cream until stiff, flavor with lemon and sugar, and spread on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tapioca
- Swells in milk and thickens as it cooks, giving the pudding its body.
- Milk
- Hydrates the tapioca and forms the liquid base of the pudding.
- Eggs
- Yolks enrich the pudding and help it set into a creamy texture.
- Cream
- Whipped to stiffness, it adds a light, rich topping.
The step that matters
Beating the yolks into the hot tapioca. Egg yolks can scramble if poured into very hot liquid without first being loosened. Adding the sugar and yolks off the heat, or stirring steadily, keeps the custard smooth and thickened rather than grainy.
