Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the butter and sugar together until creamy.

  2. Sift the flour and add it alternately with the well-beaten eggs, mixing well.

  3. Add the currants, candied peel, lemon rind, brandy, and minced almonds; mix until combined.

Bake and finish

  1. Pour the mixture into a tin lined with oiled paper.

  2. Bake in a moderate oven at 350°F (175°C) for 2 ½ hours.

  3. If using a shallow dripping tin, reduce baking time.

  4. Once cooled, cover with almond paste and then with white icing, if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Bind the batter and add structure and richness as they set in the oven.
Flour
Forms the structure that holds the dense batter together as it bakes.
Sugar
Sweetens the cake and helps create a creamy base when beaten with butter.
Currants
Add fruit sweetness and chewy texture throughout the cake.

The step that matters

Reducing the baking time in a shallow tin. A shallow tin lets the cake cook faster, so it can dry out or over-brown if the full baking time is used. Checking early helps keep the crumb moist.

Swap the currant
