Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding base

  1. Heat the milk in a double boiler until just before boiling.

  2. Stir in the sago and cook until thickened, about 30 minutes, stirring frequently.

  3. Add the butter, sugar, and salt.

  4. Let the mixture cool.

  5. Mix in the beaten egg yolks and wine.

Bake and top

  1. Pour the mixture into a buttered pudding dish.

  2. Bake at 350°F (175°C) for 30 minutes.

  3. Allow the pudding to cool.

  4. Spread the raspberry jam on top.

  5. Beat the egg whites until stiff.

  6. Mix in 4 tablespoons powdered sugar.

  7. Spread the meringue over the pudding.

  8. Brown the meringue quickly.

  9. Serve immediately.

  10. Refrigerate the meringue and brown just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the creamy liquid base that the sago thickens into a pudding.
Sago
Thickens the milk as it cooks, giving the pudding its body.
Eggs
Egg yolks set the custard, while whipped whites form the meringue topping.
Butter
Adds richness and fat, softening the texture and carrying flavour.
Granulated sugar
Sweetens the pudding and helps the meringue stay tender.
Raspberry jam
Adds fruity sweetness and acidity in a layer beneath the meringue.

The step that matters

Browning the meringue. Meringue can weep or collapse if it sits too long, and overbaking makes it tough. Browning it quickly just before serving keeps it light and sweet.

Swap the raspberry

How well each one fits the dish's main ingredients (milk, butter, sugar, egg, wine):

  1. Vanillafits better

  3. Applefits about as well
