Ingredients

Directions

Line the mould

  1. Butter a mould and line the inside with Savoy biscuits, moistening the edges with beaten egg white to hold them together.

  2. Arrange the biscuits upright around the sides, overlapping slightly, and cover the bottom with biscuits in a star or rosette pattern.

  3. Set the mould in the oven to dry.

Make the cream filling

  1. Whisk the cream with Vanderhum, dissolved isinglass, and loaf sugar to taste until firm.

  2. Fill the inside of the Charlotte Russe with the cream mixture.

  3. Place a slice of sponge cake on top.

Chill and finish

  1. Chill in a cool place or on ice until cold.

  2. Cover with cream.

  3. Decorate with chocolates, sprinkles, or crystallized cherries.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Savoy biscuits
Form the outer shell and hold the molded shape around the cream.
Cream
Provides richness and, when whisked and chilled, the firm body of the filling.
Isinglass
Gelatin-like setting agent that firms the cream so it holds its shape when cold.
Loaf sugar
Sweetens the cream filling.
Sponge cake
Adds a soft, absorbent layer that gives structure and a base under the cream.

The step that matters

Whisk the cream until firm. Cream must be whisked to the right stiffness before filling; under-whisked cream stays loose and will not hold its shape once chilled, while over-whisking can turn it grainy and separate.
