What each ingredient does

Cornflour
Thickens the liquid into a smooth sauce as its starch swells when heated.

The step that matters

Pour the cornflour mixture into the boiling water and stir until it thickens. Cornflour must be stirred constantly while the liquid is at a boil so the starch granules swell and disperse evenly. Adding it to still or cool liquid, or stopping stirring, can cause lumps that strain out poorly.
