Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and set the custard, while whipped whites add lightness and lift.
Stale bread
Dry crumb soaks up the hot milk and forms the pudding's body.
Milk
Provides moisture that softens the bread and forms the custard base.
Cream
Adds richness and a tender, smooth texture.
Castor sugar
Adds sweetness and balances the richness of the eggs and cream.
Lemon
Its rind adds a bright citrus aroma to the pudding.

The step that matters

Fold in the whipped egg whites gently. Whipped whites trap air that gives the pudding lift during steaming. Stirring vigorously deflates that foam, leaving a denser, heavier pudding.

Swap the lemon

How well each one fits the dish's main ingredients (vanilla, sugar, milk, cream, egg):

  1. Strawberryfits better
  2. Figfits better
  3. Coconutfits better
  4. Lemonthe original

Fit is the average pairing score against vanilla, sugar, milk, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
