Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and 34,122 recipes mention both. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

My Piquant Sauce

Ingredients

Directions

Prepare

  1. Chop the eschalots, parsley, and gherkins.

Make the sauce

  1. In a clean quart saucepan, melt the butter over medium heat.

  2. Add the vinegar and chopped eschalots; stir until the vinegar reduces and the butter is clear.

  3. Add the flour and stir for four to five minutes.

  4. Pour in the stock and season with pepper and salt.

  5. Bring to a boil, then skim off any foam.

  6. Reduce heat and simmer gently for ten minutes.

  7. Stir in the parsley and gherkins, then bring to a boil again.

  8. Skim again if necessary and adjust seasoning as desired.

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

Flour and butter share little aroma chemistry, yet 124,287 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the stock into a smooth, lightly bodied sauce as it cooks with the butter.
Butter
Provides fat and richness, and forms the base in which the flour is cooked.
Stock or broth
Supplies the liquid body of the sauce and savoury flavour.
Vinegar
Adds acidity that gives the sauce its sharp, piquant character.

The step that matters

Skim the foam and simmer gently. Foam that is not removed can cloud the sauce and leave a scummy texture. A gentle simmer keeps the thickened sauce smooth rather than letting it scorch or break.

Flavor stand-ins for the parsley

How well each one fits the dish's main ingredients (flour, vinegar, butter, pepper):

  1. Tarragonabout as good a flavor fit
  2. Parsleythe original

Fit is the average pairing score against flour, vinegar, butter, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
