Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the cream its body.
Milk
Forms the liquid base of the cream.
Egg yolks
Enrich the cream and help it set as it thickens.
Egg whites
Form the icing topping that sits over the cooled cream.

The step that matters

Boil until thickened. Tapioca starch needs to reach a full boil to swell and thicken the milk. Egg yolks added to hot liquid can scramble if the mixture is overheated, so keep the heat controlled while stirring.

Swap the lemon
