Why it works: Celery and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 3,467 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Celery Stewed

Ingredients

Directions

Prepare

  1. Wash the celery well and cut it into 6‑inch lengths, trimming the roots.

  2. Blanch the celery in boiling water for 5 minutes, then transfer to cold water for 1 hour.

Cook and finish

  1. Place the celery in a stewpan and cover with boiling stock. Cook gently for 1 hour.

  2. Remove the celery and reduce the stock until just enough remains to cover the celery.

  3. Add lemon juice, salt, and sugar to the reduced stock before serving.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Forms the body of the stew and gives it its main vegetable texture and flavour.
Boiling stock
Provides the liquid that cooks the celery and, once reduced, forms the savoury sauce.
Lemon juice
Adds acidity that brightens the flavour of the reduced stock.

The step that matters

Reducing the stock. Reducing the stock until just enough remains to cover the celery concentrates its flavour without leaving too much liquid. Reducing too far can make the sauce salty and thick, while too little leaves it thin and diluted.

Swap the celery

How well each one fits the dish's main ingredients (lemon, sugar):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Celerythe original

Fit is the average pairing score against lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
