Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the soup.
White stock
Supplies the liquid base and carries the flavour of the herbs and mace.
Cream
Adds richness and a smooth, silky mouthfeel to the finished soup.

The step that matters

Gently boil the sweetbreads in the stock. A vigorous boil toughens the proteins in the sweetbreads and can make the meat firm and grainy. A gentle simmer lets them become tender while the stock stays clear and flavourful.

Swap the mace

How well each one fits the dish's main ingredients (celery, lemon, pepper, cream):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against celery, lemon, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
