What each ingredient does

Brussels sprouts
The main vegetable; boiling softens their dense leaves until tender.
Baking soda
Raises the water's alkalinity, helping the sprouts keep a bright green color while boiling.
Butter
Adds fat and richness, coating the sprouts as they are tossed in the pan.

The step that matters

Boil quickly with the lid off. Sprouts need a fast, vigorous boil in plenty of water so they cook evenly and stay green. Leaving the lid off lets volatile sulfur compounds escape, reducing the strong cabbage-like smell and bitterness.
