Bread Pudding

Ingredients

Directions

Prepare the bread

  1. Soak the bread scraps in cold water.

  2. Boil the milk in a saucepan. Add a piece of butter to the milk to prevent burning.

  3. Squeeze out the water from the soaked bread and return the bread to the basin.

  4. Pour the boiling milk over the bread and let it soak until soft.

Make the mixture

  1. In a small bowl, beat the eggs with the sugar.

  2. Stir the raisins or wash and dry the currants.

  3. Mash the soaked bread with a fork until smooth.

  4. Mix in the raisins or currants, eggs, and sugar.

Bake

  1. Grease a pie dish or tin that holds 2½ pints and pour in the mixture.

  2. Bake in a 400°F (200°C) oven for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread scraps
Soaked and mashed to form the soft, moist body of the pudding.
Milk
Softens the bread and forms the custard that sets around it in the oven.
Eggs
Bind the mixture and help it set into a firm, sliceable custard as it bakes.
Moist sugar
Adds sweetness and moisture, and helps the crust brown lightly in the oven.
Raisins or currants
Add chewy pockets of fruit sweetness throughout the pudding.

The step that matters

Squeeze out the soaked bread before mixing. Bread holding too much water dilutes the egg and milk custard, so the pudding may stay loose and fail to set properly in the oven.

Swap the raisin

How well each one fits the dish's main ingredients (bread, milk, egg, sugar, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Raisinthe original

Fit is the average pairing score against bread, milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
