Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

Roast the lamb

  1. Roast the hind-quarter of lamb for 1¼ to 2 hours, basting regularly.

  2. Roast the fore-quarter of lamb for about 2 hours.

  3. Roast the leg of lamb for 1 to 1½ hours.

  5. Before the lamb is done, sprinkle it with finely-minced parsley.

What each ingredient does

Lamb
Is the main protein; its fat and connective tissue soften and flavour the meat during slow roasting.
Butter
Adds fat and richness, carrying flavour into the cavity and helping the meat stay moist.
Orange juice
Adds acidity and light sweetness that brighten the rich, fatty flavour of the lamb.
Finely-minced parsley
Adds fresh, green aroma and a bright finish on the cooked meat.

Swap the orange

How well each one fits the dish's main ingredients (lamb, butter, parsley, mint, sauce):

  1. Lemonfits better
  2. Limefits better
  3. Avocadofits better
  4. Orangethe original

Fit is the average pairing score against lamb, butter, parsley, mint, sauce. Candidates are from the same food group and used in at least 100 recipes.
