Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pluck and singe the goose, then clean it carefully.

  2. Cook the liver and gizzard as you would for turkey.

  3. Boil the potatoes, then skin and mash them.

  4. Chop the onions finely and soak them in cold water.

  5. Mix the mashed potatoes with butter, salt, pepper, sage, and drained onions.

Roast and serve

  1. Stuff the goose with the potato mixture and sew up the opening.

  2. Roast the goose at 350°F (175°C) for 1 hour and 45 minutes, basting regularly.

  3. Prepare gravy using the liver and gizzard as for poultry.

  4. Serve with apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Forms the main dish, and its fat renders during roasting to crisp and brown the skin.
White potatoes
Absorb the goose's fat and juices in the stuffing, keeping the filling moist and flavourful.
Onions
Add aroma and sweetness as they cook inside the stuffing and soften in the juices.
Butter
Adds richness and fat, helping the stuffing taste rounded and feel smooth.
Finely rubbed sage leaves
Contribute a herbal, aromatic flavour that complements the rich meat.

The step that matters

Basting the goose during roasting. Goose has a lot of fat under the skin, and it renders out as the bird cooks. Regular basting keeps the surface moist and helps the skin brown evenly, while the fat drains away from the meat.

Swap the sage

How well each one fits the dish's main ingredients (potato, onion, butter, pepper):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Sagethe original

Fit is the average pairing score against potato, onion, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
