Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's head
Provides the meat and gelatin that give the dish its body and texture.
Cream
Adds richness and a smooth, silky moisture to the sauce.
Butter
Adds fat for richness and a rounded, savoury flavour.
Sherry wine
Adds acidity and aromatic depth that brightens the rich meat.
Hard-boiled eggs
Add soft, creamy texture and body to the mixture.

The step that matters

Boil gently until the meat is tender. Boiling hard toughens the proteins and can break the meat apart, while slow simmering converts collagen to gelatin, so the meat becomes tender and the liquid rich enough to reduce into a body-giving base.
