Banbury Tarts

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the chopped raisins, lemon rind, lemon juice, beaten eggs, and sugar.

Shape and bake

  1. Roll out the puff pastry and cut it into rounds the size of a saucer or squares.

  2. Place a spoonful of the filling in the center of each pastry round.

  3. Fold the edges together carefully to seal the filling inside.

  4. Bake in the preheated oven until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Provide sweetness and chewy body that fills the tart.
Eggs
Bind the filling and help it set when baked.
Sugar
Adds sweetness and helps the filling brown in the oven.
Puff pastry
Forms the flaky, golden shell that holds the filling.

The step that matters

Sealing the pastry edges. If the edges are not sealed firmly, the wet raisin filling can leak out during baking and burn on the tray. Pressing the edges together well keeps the filling inside as the pastry rises and the eggs set.

Swap the lemon

How well each one fits the dish's main ingredients (raisin, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Lemonthe original
  4. Datesfits about as well

Fit is the average pairing score against raisin, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
