Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Potato Rolls
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Make the dough
Dissolve the yeast in lukewarm water.
In a large bowl, mix flour, butter, mashed potatoes, sugar, salt, and beaten eggs.
Add the milk and dissolved yeast to the mixture.
Rise, shape and bake
Set the dough to rise for 2 hours.
Add about 1 quart of flour to make a soft dough and let it rise again.
Shape into small rolls and bake in a 400°F (200°C) oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- All-purpose flour
- Provides the gluten structure that holds the dough together and gives the rolls their shape.
- Mashed potatoes
- Add moisture and starch that keep the rolls soft and tender.
- Butter or lard
- Adds fat that tenderizes the crumb and keeps the rolls soft.
- Eggs
- Add richness and help bind the dough.
- Compressed yeast
- Produces carbon dioxide as it ferments, making the dough rise.
- Sugar
- Feeds the yeast, adds sweetness, and helps the crust brown.
The step that matters
Adding the flour for a soft dough. The dough is already wet from the milk, potatoes and eggs, so flour should be added gradually. Too much flour dries the dough and makes the rolls dense and firm instead of light.
Swap the potato
How well each one fits the dish's main ingredients (flour, butter, milk, egg, sugar):
- Sweet potatofits about as well
- Leekfits about as well
- Arrowrootfits about as well
- Potatothe original
Fit is the average pairing score against flour, butter, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
