Red Mullet

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Melt butter in a porcelain fireproof baking dish.

  3. Add the fish and cook for 10 minutes, basting frequently.

  4. Remove the fish and keep it warm in the serving dish.

  5. To make the sauce, add a little burning brandy to the butter used for cooking the fish.

  6. Stir continuously while the brandy burns off.

  7. Once burnt out, add more brandy, light it again, stir well, and pour over the fish.
