Coffee Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Cream the butter and brown sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the strong cold coffee and mixed spices.

  4. Fold in the currants and bicarbonate of soda.

  5. Pour the batter into a greased baking pan.

Bake

  1. Bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air, giving the cake a light, tender crumb and rich flavour.
Eggs
Bind the batter and add structure as they set in the oven.
Brown sugar
Adds sweetness and moisture, and deepens the caramel flavour of the cake.
Bicarbonate of soda
Reacts with the acidic coffee mixture to produce gas that helps the cake rise.
Strong cold coffee
Adds liquid and a deep, roasted flavour to the batter.

The step that matters

Folding in the bicarbonate of soda. Bicarbonate of soda starts reacting as soon as it meets liquid and acid, so the batter should go into the pan and oven promptly to keep the rise from being lost.

Swap the currant

How well each one fits the dish's main ingredients (butter, sugar, coffee, egg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Currantthe original

Fit is the average pairing score against butter, sugar, coffee, egg. Candidates are from the same food group and used in at least 100 recipes.
