Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Bake the trout

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the trout and place it in the oven to bake for 30 minutes, basting every 5 minutes.

  3. Once done, remove the trout and reduce the sauce if necessary.

Finish and serve

  1. Incorporate the anchovy butter and lemon juice into the sauce, then pour it over the trout.

  2. Sprinkle fine baked bread crumbs over the trout and return it to the oven for 5 minutes.

  3. Serve the trout with a border of lobster croquettes.

What each ingredient does

Trout
Forms the main body of the dish, cooked gently by baking in the oven.
Anchovy butter
Adds savory, salty depth and fat that enriches the sauce poured over the trout.
Lemon juice
Adds acidity that brightens the sauce and balances the richness of the butter.
Baked bread crumbs
Sprinkled on top, they toast in the oven to add a crisp, golden texture.
Sherry
Forms the liquid base of the sauce, adding acidity and a nutty aroma as it reduces.

The step that matters

Reducing the sauce. Reducing the sherry concentrates its flavor and thickens the liquid. If it is left too thin, the anchovy butter and lemon juice will dilute it and the sauce will not coat the fish.

Swap the lemon
