What each ingredient does

Ox tongue
Main cut of meat; long gentle braising turns its tough muscle tender and rich.
Brandy
Adds aromatic depth and helps carry flavour from the spices into the braising liquid.
Broth or stock
Provides the liquid that cooks the tongue slowly and moistly, adding savoury flavour.
Carrot, onion, and celery
Aromatic vegetables that release sweetness and savoury depth into the braising liquid.

The step that matters

Braise gently over low heat. Tongue is a dense, collagen-rich muscle. Gentle, low heat lets collagen slowly break down into gelatin, producing tender meat. A hard boil toughens the muscle fibres and can leave the meat dry and stringy.

Swap the mace

How well each one fits the dish's main ingredients (carrot, onion, celery, clove, brandy):

  1. Allspicefits better
  2. Thymefits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against carrot, onion, celery, clove, brandy. Candidates are from the same food group and used in at least 100 recipes.
