Fillets of Fowls, a LA Royale

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fillets

  1. Trim the fowl fillets, leaving the small fillets intact.

  2. Lard half of the fillets.

  3. Decorate the other half with black truffle.

Bake and glaze

  1. Place the larded fillets on thin layers of fat bacon in separate sauté pans.

  2. Moisten the larded fillets with half-glaze.

  3. Cover the decorated fillets with clarified butter.

  4. Bake both in the oven at 350°F (175°C) for about 5 minutes.

  5. Remove the decorated fillets.

  6. Glaze the larded fillets.

  7. Return the larded fillets to the oven for 2 minutes.

  8. Glaze the larded fillets again before serving.

Serve

  1. Dish up by alternating a larded fillet with a decorated one.

  2. Fill the center with a ragout of scallops, fat livers, and truffles tossed in allemande sauce.

  3. Pour some of the sauce around the entrée and serve.

What each ingredient does

Fowl fillets
Form the main body of the dish, carrying the larding and truffle decoration.
Fat bacon
Lines the pans and lards the fillets, adding fat and moisture as it cooks.
Half-glaze
Moistens the larded fillets and builds a rich, glossy coating when reduced.
Clarified butter
Covers the decorated fillets, adding richness and helping them cook without drying.
Black truffle
Adds decorative appearance and an earthy, aromatic flavour.

The step that matters

Glazing the larded fillets. Each glaze must be applied while the surface is warm so it sets into a thin, even sheen. Over-reducing or over-baking can dry the fillets and make the glaze tacky or bitter.
