Purde of Partridges, K LA Conde

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat your oven to 350°F (175°C).

  2. Clean and prepare the partridges.

  3. In a large skillet, melt butter over medium heat.

  4. Add chopped onions, carrots, and celery; sauté until soft.

  5. Season with thyme, bay leaf, salt, and pepper.

  6. Place the partridges in a roasting pan and cover with the sautéed vegetables.

  7. Pour stock over the partridges and cover the pan with foil.

  8. Roast in the oven for about 1 hour, basting occasionally.

  9. Remove the foil for the last 15 minutes to brown the skin.

  10. Serve hot.
